Two Choices #5: Croissant or Muffin


If you have to choose between a blueberry muffin and a croissant, the butter croissant is actually fewer calories! A blueberry muffin is about 500, and the croissant is “only” 270. You’d think with the word butter in the name, it would be super bad for you! These days, I’m so chubby, I’ll have to choose the croissant, but there’s nothing yummier than a blueberry muffin straight from the oven with a crunchy muffin top on it and steaming soft cakey goodness inside. YUM.

What do you choose? Muffin or croissant?

Thursday 3: Fast Food

Thursday 13 is too many. I do three.

This week I’m in an eating mood. Hell, I’m actually in an eating mood every week! LOL Anyway, here are my three favorite fast food places.

1. In N Out Burger – This chain is only in the west, so sorry all you east coasters. There is NOTHING like the first bite of an In N Out burger with everything. They make your burger only after you order it. The bun is grilled. The onions are sweet, the french fries freshly cut every day.

2. Carl’s Jr. – Too bad my kids don’t like this place. I think their Famous Star burger kicks butt. I love the gooeyness of the mayo and ketchup.

3. McDonald’s – If all calorie counting goes by the wayside, I LOVE their filet o’ fish. YUM. Combine it with some yummy fries and I’m a happy camper.

Shrimp Scampi Pizza

Shrimp Scampi Pizza

3 tablespoons extra-virgin olive oil
12 cloves garlic, 8 smashed and peeled and 4 finely chopped
1 bunch flat-leaf parsley, trimmed
One 15-ounce container ricotta cheese
1/2 cup grated parmesan cheese, plus more for sprinkling
2 pounds shrimp—peeled, deveined and chopped
Salt and pepper

1 baguette, split lengthwise and quartered crosswise

1. In a large skillet, heat the olive oil over medium-low heat. Cook the smashed garlic until golden, about 5 minutes. Using a slotted spoon, transfer the garlic to a food processor; reserve the olive oil.

2. Add the parsley to the garlic in the food processor and pulse to finely chop; set aside 1/4 cup. Add the ricotta and parmesan to the food processor; pulse to combine.

3. Preheat the oven to 500°. In the same skillet, heat the reserved olive oil over medium-high heat. Add the chopped garlic and cook, stirring, for 1 minute. Add the shrimp, season with salt and pepper and cook, stirring, until opaque, about 5 minutes. Stir in the reserved 1/4 cup parsley-garlic mixture.

4. Spread the cheese mixture on the cut side of each piece of bread and arrange on a parchment-paper-lined baking sheet. Spoon the shrimp mixture on top and sprinkle with more parmesan. Bake until the cheese is melted, 7 to 10 minutes.

Two Choices #3: Italian or Mexican?

The other day when my son was marketing with me, I said he could get some cans of soup and you’d think he’d died and gone to heaven. He adores soup. Just this afternoon he snaked the can of Italian Wedding Soup I had gotten to try myself. Now I’ll have to buy it again, but he did say it was really good. (He also loves meatballs, so he considers meatballs IN soup to be culinary perfection.)

Now, I have had albondigas soup, which is Mexican and very yummy. I like the bits of rice that are usually embedded in the little meatballs.

So, if given the choice, which would you eat, the albondigas (left) or the Italian Wedding (right)?
